Batch No. 11 & N0. 12 were both uncharted waters for Tapped Out. I had never before made more than 10 batches, and when the weather turned and froze again I kept pushing through until April 20th. Batch No. 12 is a very strong in earthy tones. Darker maple syrups often have a finish similar to a molasses type flavour, this batch is no exception to that rule. If you like it dark, Batch No. 10, No 11 & No. 12 are the ones you want. Tapped Out Small Batch maple syrup its based on tradition, we make maple syrup the old fashioned way, outside in a pan, over and open fire.
